Food lovers will rejoice in knowing that the multi-course gourmet dinner is perfectly executed by some of the top chefs in Mexico. In fact, for my Dinner in the Sky adventure, the guest chef was the well-known and super talented Chef Massimo Fongaro.
The evening started with a few cocktail drinks and the signing of a waiver form. This is a simple formality since every safety precaution has been considered. As the sun was about to set in the mountains, the guests, as well as the chef and his kitchen brigade, were harnessed around the table. Once secured, we were slowly lifted to our dining height which offered us a breath-taking view! And ladies, you can still wear an evening dress.

The exquisite meal consisted of a beautiful melange of courses: an appetizer consisting of scallops in a raspberry sauce with tomatoes; a delectable rich lobster lasagna; a beef filet with corn polenta served with cambozola sauce and freshly shaved truffles that the Chef was ever so generous with. Our pièce de résistance was the Chef’s interpretation of a tropical Tiramisu filled with strawberry and passion fruit. The evening was accentuated by a beautiful display of fireworks lighting up the night sky.
